Avocado Potato Salad recipe
The mayonnaise is usually the only creamy component in potato salad but this time avocado adds a fresh flavor. Serves 8 as a side.
Ingredients:
- 2 pounds red potatoes, cooked and cut into quarters
- 2 cups mayonnaise
- 1 red onion, diced
- 2 stalks celery, diced
- 1/2 cup chopped parsley
- 2 lemons
- 2 whole avocados, peeled, pitted, and diced
- salt and pepper, to taste
Directions:
Toss the potatoes with the mayonnaise, onion, celery, and parsley.
Add the juice of both the lemons and the avocado. Fold together.
Season with salt and pepper and serve.
